Vegan Double Sandwich

Ingredients
- 1 Polarbröd Rye Square
- 20 g cashew nut paste
- 20 g vegan cream cheese
- 5 g miso paste
- 30 g diced natural tofu
- 30 g soya beans
- 5 g sriracha mayonnaise
Do this
Tip! Use frozen soya beans, as they retain better colour and save time
- Mix together the tofu, soya beans, miso paste and sriracha mayonnaise
- Spread the cashew paste on one of the slices
- Spread the vegan cream cheese on the other slice
- Add the tofu mixture to the vegan cream cheese slice
- Lay the other slice of bread on top and press down lightly
- Cut the sandwich in two with a sharp knife
- Stack together, wrap and place in the fridge
